The weather was beautiful today.
The surprise zinnias that came up from seed are blooming.
I harvested our first mess of green beans today. Did you know that is what you call it? A “mess”… perfect.

A few years back I discovered a great green bean recipe in The Houston Chronicle. It has become a staple dish for Thanksgiving and Christmas dinners.
Something a little different from the usual (and a little scary)… green – bean – casserole.
Don’t get me wrong… my girls love those crunchy little onion things… but you can hold your culinary head high, as you watch these tasty little bundles fly right off the serving platter.
The recipe came from Rebecca Rather of Rather Sweet Bakery* in Fredericksburg, Texas.

Just wondering if I could use frozen whole green beans for this recipe …I want to make this for thanksgiving and I have a 5 lb bag of frozen green beans;)
Hi Pam… I have made this recipe countless times, but have never attempted using frozen beans. I think the longer length you get from fresh beans works well for this recipe. If you are determined to use frozen, I would recommend a trial run.
Do the bundles need to be in a single layer or can they be stacked while cooking?
Definitely, a single layer. But you can get a lot of bundles on a large cookie sheet!
Thanks. Have you ever made them in advance and reheated or made them early and kept them in a warming drawer? I’m a little gunshy of the bacon giving off a burnt smell.
I have not made them in advance, but I have had some left over and reheated them…although that is rare, because they usually quickly disappear! I would NOT recommend making them ahead. They still taste good, but they do shrivel a bit, and are not nearly as plump and good looking. I’ve never had the bacon give off a burnt smell, and I have made these countless times. You might use a thicker cut of bacon if you are still worried. Hope that helps!
